Every oyster tells a story, and our oysters have quite the tale to tell. Within every shell is a full circle journey which starts and ends here on the Big Island of Hawaii.
Our oysters have the unique history of each being born and raised right here on Hawaii Island in specialized shellfish hatcheries. From here, the baby oysters make their first flight to either Oahu or Washington State where they are lovingly raised by expert generational oyster farmers.
Each of our partner farms are proud members of the Pacific Coast Shellfish Growers Association who hold themselves to the highest environmental codes of practice and growing methods. We exclusively source oysters meticulously grown to adulthood in modern aqua-purses which allow the oysters to grow deeply cupped shells, delicious full meat, and an appealing smooth shape.
Once the oysters reach their perfect balance of size, shape, and “meroir” they are harvested and flown back to Hawaii Island directly from the farmers to Salinity Oyster Co. for the ultimate expression of freshness. Through our extensive network of oyster growers, we pride ourselves on always bringing you the most perfect oysters available at the time of your event.
