My name is Melissa Tsao, a mother, oyster lover, and entrepreneur owner of Salinity. This mobile raw bar is a dream of mine turned reality and I’m so excited to share my love of oysters with you.

For ten years I had raised and served oysters in the luxury service industry here on Hawaii Island before becoming mom to a precocious little girl. Prior to my time growing oysters, I earned a Bachelors degree in Marine Biology from UH Hilo and have run a successful Aquatic Consulting business for over a decade. Now, I’m pouring my passion for shellfish into bringing you all of the joy that sharing oysters with friends can offer.

My husband Nathan has been raising oysters here in Hawaii hatcheries for over twenty years, is the GM of the Jamestown Seafood Hatchery program, and also represents Hawaii on the Pacific Coast Shellfish Growers Association Board of Directors.
